Pasta With Dried Fruit

Food Ingredients:
3 tablespoons extra-virgin olive oil 4 cloves garlic, minced 1/4 cup finely-chopped dried papaya 1/4 cup finely-chopped dried cherries 1/4 cup finely-chopped dried apricots 2 1/2 tablespoons balsamic vinegar 2 Roma tomatoes, diced 12 ounces pasta of choice

Recipe preparation:
1 Heat olive oil in a large pan. Add garlic and saute over medium-low heat until lightly browned. 2 Add the fruit, vinegar, and tomatoes. Cook on low heat for 20 minutes. Cover and keep warm. 3 Cook pasta as directed on the package. Drain thoroughly and toss with dried-fruit sauce.
