Olive Garden’s Pasta Fagioli – RIPOFF RECIPE

Here’s the recipe:
1 lb hamburger
1 cup diced onion
1 cup sliced carrot
1 cup chopped celery
2 minced garlic cloves
2 (14 1/2 ounce) cans diced tomatoes
1 (15 ounce) can red kidney beans, undrained
1 (15 ounce) can great northern beans, undrained
1 (15 ounce) can tomato sauce
1 (12 ounce) can V8 vegetable juice
1 tablespoon white vinegar
1 1⁄2 teaspoons salt
1 teaspoon oregano
1 teaspoon basil
1 teaspoon black pepper
1⁄2 teaspoon thyme
1⁄2 lb ditali pasta, al dente

Brown the hamburger, drain off the fat.
Add onion, carrot, celery and garlic and sauté until onion is clear (approx 10 minutes).
Add everything else except pasta, and simmer on low for one hour.

Cook pasta during last 10 minutes of simmering soup.

serve soup over pasta and store leftovers separate. pasta in one container and soup in the other. Enjoy.

    JACK, I SEEN THE EPISODE LAST NIGHT. OF WEST TEXAS INVESTORS. IN MY OPINION, THEY KIND OF GAVE YOU, A LITTLE RAW DEAL, SO TO SPEAK.  WHEN THEY HAD THAT JUDGING CONTEST AND ONE OF THE JUDGES WAS ONE OF THE GUYS THAT HAD TASTED THE SAUCE ALREADY, I THINK THAT WAS WRONG.     This looks wonderful and would be great in the winter.  I would make one change and that would be the reduction of salt.  There is salt in the tomato products, salt in the V8, salt in the beans and then extra salt is added.  I would rinse the beans, use no salt-added products when I can, and not add any extra salt.
