Pan Fried Beef Bun 牛肉馅饼
Food Ingredients:
150 grams Bread flour 150 grams All purpose flour 1 teaspoon Icing sugar 1 teaspoon Salt 180 milliliters (170 g) Water 1 teaspoon Instant yeast Filling: (recipe being modified) 360 grams Ground beef 2 teaspoons minced ginger 1 teaspoon Sugar 1/4 teaspoon Salt 1/2 teaspoon Pepper 1/2 tablespoon Oyster sauce 1 tablespoon Cooking wine (hua tiao jiu) 1 Egg white (about 35- 40 g), lightly beaten 1/2 tablespoon Corn flour 2 tablespoons Water 3 stalks Spring onion, cut finely (about 50 g)
Recipe preparation:
1 Mix all the ground beef filling ingredients together and put in refrigerator for later use. 2 Sift bread flour, plain flour and icing sugar, salt together in a large bowl. Add instant yeast to the water and mix till yeast dissolved. Then pour dissolved yeast to flour mixture, mix with a spatula to becomes a sticky dough and pour on dusted flour table. Press dough down with the heels of your hand, then roll the dough towards you. Repeat this process a few times until dough becomes smooth and shape it into a ball. 3 Cover the dough in a bowl and let it rest for about 15-30 mins or dough rises to 1.6 times or doubled. 4 Use your index finger to poke the dough, it does not spring back, it is ready to use. 5 Divide dough into 15 to 16 small balls (about 30g each) and flatten dough into a circle, the edges are thinner than the center. I didn’t do a good job on this, you can see (picture below) the sealed side is quite thick 🙁 6 Add beef filling, with thumb on the filling and gather edge together and seal. 7 Place buns sealed side down in frying pan with some oil over medium low heat and fry buns till golden brown on both sides, about 5-6 mins on each side. 8 Serve hot buns immediately.
