Today I wanted to share with you my one ingredient super simple low fat salad dressing recipe (that’s really not a recipe at all!)…

shhhh….

It’s a secret!…

And the ingredient is…. SALSA!

So I realize that salsa is made from more than just one ingredient, but when you are in a hurry and want a delicious salad, a simple pour from the jar is all you need!

I really love the taste of salsa on greens. I have always loved dishes like tacos, burritos, etc. where they mix salsa in with vegetables so I guess it was a natural progression that when I began eating more salads and less tacos that I’d eventually try salsa as a dressing.

Makes sense right? 🙂

When I first discovered how delicious salsa was on a salad, I was making it with some cooked quinoa. I highly recommend this combination!

More recently I have been tossing in some beans to make it more of like a taco salad. My tummy gets a little funky with beans sometimes, so I try to stay away from them most often. But every now and then I still think they are worth a bit of rumbling in the tummy.

I gave my boys some of the salad I was eating and they quickly devoured 3 bowls of their own! So if your children like salsa like mine always have, I highly suggest you toss it on some greens instead of some chips and let them go to town!

Lots of love,

Jenni B.
