Mysore Bonda – South Indian Snack, Recipe by Manjula

Ingredients
1 cup all-purpose flour (plain flour, maida)
1/4 cup rice flour
1 teaspoon salt adjust to taste
1/2 teaspoon baking soda
1/2 teaspoon cumin seeds (jeera)
1/2 cup yogurt (curd) sour yogurt works the best
Approx. 3/4 cups of water
1 teaspoon ginger finely chopped
1 tablespoon green chili finely chopped. Adjust to taste
2 tablespoons cilantro finely chopped
Oil to fry

    This is Goli bhaje. Not Mysore bonda.

    +Becky Ezra ..no. You cannot use only rice flour. You need something to
    bind it together. If you have gluten allergies, you can add either chick
    pea flour or cooked rice. Although this can change the flavor profile.

    I respect the fact that you don’t taste your food at the end of the video,
    but I do think in the case of something like these “Bondas”, it would have
    been helpful to break one open and show us what it looks like inside.

    Also known as Goli bhajji or Mangalore bhajji it is available in some
    restaaurants in Bangalore, it is preferably eaten hot.

    Ms.Manjula, I tried this last night. They were tasty but a little too oily
    for me. What did I do wrong? I did used Greek yoghurt as I didn’t have sour
    yoghurt.

    This is not Mysore bonda this is Mangalore Bhajji. The bonda always has a
    vegetable filling i.e., potato or other mixed vegggies.m
