Mini Meatloaves are perfect for a hot dinner, with leftovers to serve cold for lunch the next day. Beef and Pork are combined with herbs, spices, egg and breadcrumbs, then lovingly glazed and baked until moist and tender – give it a go!

INGREDIENTS IN THIS DISH:
500g Beef Mince
250g Pork Mince
1 Brown Onion (chopped)
2 Cloves of Crushed Garlic (about 2 Teaspoons)
200g Thinly Shaved Ham (shredded)
Olive Oil
2 Eggs
1 Tablespoon of Dried Parsley Flakes (or use fresh)
2 Tablespoons of Barbecue Sauce
2 Cups of Fresh Breadcrumbs (about 4 slices of bread)
2 Tablespoons of Tomato Ketchup
Salt and Pepper
Preparation Time: About 10 minutes
Cooking Time: About 30 minutes
MAKES 12 MINI MEATLOAVES
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
