How to make fresh pasta dough with a KitchenAid mixer & pasta attachments

Semolina Pasta Recipe
4 large eggs
3 1/3 cups of semolina or regular flour
1/2 teaspoon of salt
2 tablespoons of water
1 tablespoon of oil

Put all ingredients in a mixing bowl, attach the flat beater, and you want it on speed 2 for 30 seconds.

Attach the dough hook, and you put it on speed 2 for two minutes.

Divide the dough into eight equal parts. The. Wrap the dough balls in Saran Wrap for 15-20 minutes.

Take out of the wrap and flatten the dough. Sprinkle both sides of the dough with flour and let rest for 5-10 minutes.

Then put the roller attachment on the mixer. Set it at “1”, and send the dough through. Then set it on “3”, and I do two passes each. Then attach the spaghetti or fettuchini attachment and let the pasta dry.
