For those of you who do not like mayonnaise you can beat a couple of eggs
and dip the chicken in the eggs before putting it in the breadcrumb mixture.

dunno how much healthier this is if you use a cup of mayo… I’ll stick my
my traditional buttermilk brine then frying on a cast iron. Again, nothing
against mayo, but it just seems counterintuitive to be advertised as
‘healthier’ since it’s baked, but then we’re using a cup of mayo anyways.
No problem. You can leave the mayonnaise out and use ketchup, barbecue
sauce, or mustard instead. It is mainly used to help the breading adhere to
the chicken. Enjoy!

You could also cover the chicken with bbq sauce then bread it. So good
