Healthy Chicken and Seafood Meal Prep

Recipe
Roasted Vegetables
3/4 Cups of butternut squash
3 Cups of sweet potatoes
1/2 White onion
8 Cloves of garlic (crushed & sliced)
2 Roma tomatoes
5 Sprigs of thyme
2 Tablespoon of olive oil
Kosher salt & cracked black pepper to taste
Chicken
1 Whole roasted chicken
6 Tablespoon of Caribbean jerk rub (recipe in Jerk Chicken video)
1 Whole orange (sliced in half)
Fish/ Seafood
4 5oz Frozen salmon fillets (defrosted)
1/2 Tablespoon of olive oil
2 Teaspoons of Cajan spice
4 Frozen snow crab legs (defrosted)
2 Lemons (rolled, juiced)
3 Tablespoons of fresh parsley (chopped)
A pot of brown rice
Stir-fry Vegetables
1 Yellow, green, red, orange sweet pepper
1/2 Red onion
3 Tablespoons of ginger (julienne)
5 Bird eye chillies
2 Tablespoons of garlic
2 Star anise
Kosher salt & cracked black pepper to taste
4 Tablespoons of dark mushroom soya sauce
2 Tablespoons of cilantro (chopped)
1 Teaspoon of sesame oil
1 Tablespoon of coconut oil (for sautéing)
Green Vegetables
3 Bunches of brocolini
2 Bunches of kale
1 Tablespoon of coconut oil
Left over soya sauce from stir-fry vegetables (to steam the veg and add flavor)
