Healthy Breakfast Recipes!

Three of my favourite recipes for healthy, filling breakfasts for the new year! My homemade pistachio & blurberry granola, avocado on toast with a twist and my favourite fresh green juice.

PISTACHIO & BLUEBERRY GRANOLA
(Makes 15 Portions)

Ingredients:
3 cups of rolled oats
1 cup of (unsalted!) pistachios
1 cup of dried blueberries
1/2 cup of sesame seeds
1/2 cup of coconut oil
3/4 cup of agave nectar
optional – pinch of salt

Instructions: Mix all of the ingredients together, spread out on a large baking tray lined with parchment. Put in the oven on a medium heat for 20 minutes or until golden brown. Don’t forget to mix it up every 5 minutes or so!

AVOCADO ON TOAST
(Makes 2 portions)
1 large (or 2 Baby) avocados
1 beef tomato
6 basil leaves
2 slices of seeded bread, or rye bread
1/2 lemon
Drizzle of avocado oil or olive oil
Salt & pepper to taste

Instructions: Stone & skin the avocados and mash with a fork. Add the juice of half a lemon and salt and pepper to taste. Mix in thoroughly. Drizzle oil on your toast, rub in your basil leaves (4 leaves should be enough for both peices of toast) Top with one slice of tomato, mashed avocado, extra pepper and a basil leaf.

MY FAVOURITE GREEN JUICE
(Makes 1 large glass)
1 apple
1 courgette
1/2 cucumber
6 basil leaves
1 lime (remove peel)

    as i nutritionist i must say, that those breakfast ideas(except the juice)
    are not healthy for you at all. the granola has far too much coconut oil in
    it(even if it’s a good oil, that amount of oil is unnecessary and not
    recommended)
    the meals you showed all lack a sufficient amount of carbohydrates.
    especially in the mornings you need them. i would recommend a very low fat
    but high carb meal like oats and bananas with some plantbased milk. key is
    to eat at least 800 cal in the mornings, depending on your height and
    weight. your breakfast suggestions have a lot of fat and hardly any
    carbohydrates, which will not satiate you for a long time nor give you the
    nutrients your body needs.

    Just a tip about the granola…if you use dried fruit like raisins or
    cranberries save them for last. If you bake them they can get hard. Nuts as
    well in some cases. Something I learned in a cooking class. Oh and honey
    can be used for sweetness instead of the agave. I love the taste of honey
    in granola so I would use honey instead.

    Agave nectar is actually terrible for the environment! To make it
    manufacturers use a lot more water than they do manufacturing sugar or
    honey. Personally, I stick with honey and completely avoid agave nectar in
    my cooking. I hope you research it further and take my comment seriously.
    Agave nectar is a fad product right now, and it doesn’t deserve to be so
    popular!

    +fleurdeforce WHY did you use the American metric system and not the UK
    one? You’re British not American. I just don’t get why as a BRITISH person
    you’d measure in cups?! And not even state the UK conversion??

    Interesting how in the uk coconut oil is solid…where I am in Australia
    it’s liquid at room temperature

    These looked so good!! I absolutely love avocado on toast! I usually make
    it with an egg on top, but the tomato and basil sounds so good. Definitely
    need to try these 🙂

    Message to the other commenters: rather than taking advice from people on
    the internet as to health and nutrition (whether that’s Fleur or someone
    else), you really should check with your own health professional. Health
    and nutrition can be subjective and really depends on a person’s particular
    needs.

    I loveee avocado, but I do not like how you need to wait to eat it. It is
    pretty much: NOT YET, NOT YET, NOT YET, ripe and ready to eat and TOO RIPE
    in the next moment 🙂 Love the recipe ideas btw! xx

    It’s true, you can actually die from eating apple seeds. They contain
    Cyanide.

    It sounds very dramatic, I know. Nothing to worry about if you eat a couple
    of apples with the seeds. It only matters if you eat a lot of them. An old
    lady my boyfriend’s mom knew at a retirement home really liked the taste of
    the seeds, so she decided to collect enough to fill a mug. Well, she sort
    of kicked the bucket.
    I think if you’re not so frail, you might survive a mug of apple seeds. But
    I really wouldn’t try.

    That is one expensive batch of granola! Does anyone have any suggestions
    for alternatives to coconut oil and agave nectar? Could I just use honey?
