    I am in love with this recipy! 🙂 A good alternative – when you don’t have
    so much time to be in the kitchen: cut veggies in bite sized pieces,
    drizzle with olive oil and spices and roast along with the garlic in the
    oven. So it’s really just cutting and putting in the oven, then mixing
    together – perfect, simple, healthy and yummy! Thank you Laura :)

    i made this tonight and it was the best pasta salad i have ever had!
    used zucchini, carrots, red bell pepper, red onion, and kalamata olives +
    penne pasta. didn’t grill, though; i heavily sautéed the veggies in a small
    amount of olive oil. even the kids loved it (which is a miracle, they are 8
    and 9). i agree with the poster below suggesting to post more
    vegan/vegetarian recipes! thank you, laura! ❤
