This is brilliant! Thank you! Also, even though you didn't use a lot of vegetables, it seemed to make a fairly big amount. How many servings was the end result? Would it be enough for three people?

This recipe is 70% healthy. I see a few things that can be avoided. First of all, olive oil (provided that it's extra virgin) should only be added at the end. You don't wanna cook anything with it. Secondly, I know that for most of you it's inconceivable not to marinate your food, but trust me, adding salt is plain wrong. Food is already salty, and it is not recommendable to add any more of it. Pepper might be good, but not the one you added. I'm sure the way you cooked it is delicious, but if you claim "healthy benefits", you wanna make sure that is 100 % healthy.

Some cheap potatoes! I always add onions; it adds a lot of flavour I believe
