    Looks great. Chicken Marsala is one of my favorites. I haven’t tried making
    it since figuring out I had a wheat allergy. I’m wondering if cornstarch
    might work for the dredging or if it would ruin the whole dish.

    If you let the Marsala wine reduce without over cooking the chicken maybe 1
    tablespoon of cornstarch might thicken the sause better than the flour an
    oilve oil, if you have a wheat allergy.In fact I am sure this would not
    change the recipe much.

    asparagus not spinach 🙂

    I would make the chicken portions into smaller thinner pieces , and I
    would also serve that with mashed potatoes instead of pasta.

    My grandfather was from Sicily and was a semi-professional chef of some
    repute. He taught me how to cook and this dish is one of my favorites.
    There is one relatively minor difference between this recipe and my
    grandfather’s/mine. Otherwise this recipe is delicious as well as
    authentic.
