CREPES – How to make SWEET CREPES Recipe

CREPE BATTER
1 cup all-purpose flour
3 eggs
1/4 teaspoon salt
1/4 cup water
1 cup whole milk
1 tablespoon butter, melted
1. Combine flour and salt in medium mixing bowl. Set aside.
2. In small mixing bowl whisk together eggs, water, whole milk and melted butter. Add mixture to dry ingredients. Whisk until batter is smooth.
3. Cover bowl and let batter rest at room temperature for 1-2 hours, or in the refrigerator overnight. This rest allows the flour to expand and thicken the batter.
4. Heat 12-inch non-stick skillet, over medium-heat, about 3-5 minutes or until a drop of water sizzles off the surface.
5. Lightly grease bottom of skillet with vegetable oil or butter. If excess oil or butter remains on the skillet surface, wipe off with a paper towel before adding batter.
6. Add 3 tablespoons of crepe batter to heated skillet. Immediately, lift skillet while swirling batter to side of skillet. Cook crepe until golden brown around the edge. Flip crepe once and continue to cook until golden, about 1-2 minutes.
7. Remove crepe from pan and place browned side down on a plate. Cover crepes with plastic or foil to keep moist.
Makes 18-20 crepes
BLUEBERRY FILLING
2 cups (1-pint) fresh blueberries
1/2 cup sugar
1 tablespoon fresh lemon juice
1. Add all ingredients into a non-strick skillet, over medium-heat, stirring (about 3-4 minutes) until bubbly. Remove from heat and cool.
HONEY WHIPPED CREAM
1 cup heavy whipping cream
4 tablespoons honey
1. Add both ingredients into a small mixing bowl. Using hand-mixer, beat 2-3 minutes until whipped. Keep chilled in refrigerator, covered, until ready to use.
Assemble Crepes as desired.
