    If you can’t afford crab, you can use lobster or caviar… nice going
    john.. or some foie gras

    Cool! Another hard boiled egg method. I wait ’til a full boil then
    carefully drop in the eggs with tongs. Boil 12 mins exactly. Then ice bath.
    For ease of shell eggstraction, I use Chef Pepin’s method of popping a
    small hole in the blunt end of the egg with a pin, allows a small amount of
    air/water between shell and egg and they come right off. I will try this 17
    minute method too as it looks good for when you need those 17 mins to prep
    something else :). Thanks Chef John. :)
