you know Allrecipes, this is more like a tamales casserole, not a enchilada casserole, the latter would have tortillas not cornmeal. Its kind of a take off of a popular recipe in the 1960-70's done with ground beef called tamales casserole

I made this for dinner yesterday. It was freakin AMAZING! I did however use a rotisserie chicken since I was short on time. I also mixed half a can of corn in with the corn bread mixture. I also sauteed some red bell pepper and onion in a pan and then added the tomato sauce and spices. It was so delicious!

Looks crazy good. I'll probably take the lazy route though, forego the cornbread/baking, and just put the filling on tortillas 😉
