Chicken Mexicano
Food Ingredients:
1 chicken, in pieces 1 tablespoon salt 2 tablespoons chili powder 1/4 cup melted butter 1 cup sliced onion 1/2 cup broken nuts 1/2 cup sliced stuffed olives 1/2 cup flour 1/2 tablespoon pepper 1/2 tablespoon oregano 1/4 tablespoon marjoram (mint) 1 cup claret or port wine
Recipe preparation:
1 Preheat oven to 400 degrees. Combine flour, salt, pepper, chili powder and oregano in a paper bag with the chicken. Dredge. Place in buttered casserole and pour melted butter on top. Bake 45 minutes to brown. 2 Combine wine, onion, olives and marjoram. Pour over the chicken. Cover and bake 45 additional minutes. Garnish with nuts. Serve.
