Carrot Spice Loaf

1 Have prepared ahead of time: 1/2 c. chopped dates 1/2 c. pineapple tidbits 1/2 c. maraschino cherries 2 Blend until smooth: 1 c. water 2 tbsp. orange juice concentrate 1/3 c. cashew pieces 3 In mixing bowl, combine: 1 1/4 c. oats, uncooked 3/4 c. brown sugar, packed 4 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. allspice 1/4 tsp. salt 2 tbsp. Ener-g egg replacer 4 Add applesauce mixture to mixture in mixing bowl. Mix well and then immediately add the carrot mixture. Place in four small, sprayed loaf pans. Bake for 50 minutes in a 350 degree oven. Or use one large loaf pan and bake for 1 hour and 10 minutes. Leave in the pan for 10 minutes after removing from oven. Remove loaves from pans and continue cooling. This tastes better the second day.
