Apricot Relish

Food Ingredients:
1 kg apricots 2 cups onion, diced 2 teaspoons salt 5 cloves teaspoon cayenne pepper 2 cups vinegar, white cup golden syrup cup sugar (caster) 2 teaspoons tumeric teaspoon curry powder 2 teaspoons flour, plain

Recipe preparation:
1 Washed apricots and remove stones. 2 Place all ingredients except flour in a pot, bring to the boil, stirring,reduce heat and simmer 45 minutes. Stir occasionally. 3 Blend flour with a little water and stir into mixture. Bring back to the boil and simmer 5 more minutes. 4 Ladle into hot jars and seal. 5 Serve with chicken, pork or ham. 6 Keeps for 3-4 months. 7 Ensure storage jars are well sterilised.
