I put it over pasta because it goes awesome with it.
Pretty straight forward recipe, for even more crispy batter try using carbonated water instead of regular water.

    I made this recipe tonight for my four children. This is the first time any of us have ever tried eggplant. I admit I lied to them and told them the eggplant (which I diced) was "homemade croutons" so they would try it. We were not disappointed. This recipe rules!!
