Vegan Bean & Potato Soup
Food Ingredients:
2 cups dry beans (soaked and drained), or 2 cans of beans 5 red potatoes (depending on size and how much you like potatoes) 2 carrots 2 stalks of celery 1/2 cup chopped onion 1 teaspoon minced garlic 1 can diced tomatoes 1/2 cup pearled barley (optional) 4 cups vegetable broth 4 cups water 2 teaspoons vegetable oil 2 bay leaves 1/2 teaspoon basil 1/2 teaspoon oregano 1/2 teaspoon black pepper 1/2 teaspoon thyme
Recipe preparation:
1 Chop vegetables. 2 Saute onions and garlic in vegetable oil. 3 Add all ingredients other ingredients. 4 Simmer for app. 1 hour.
