Teriyaki Chicken Stir Fry

2 boneless, skinless chicken breasts
8 oz pineapple juice
3/4 cup soy sauce
2/3 cup granulated sugar
2/3 cup brown sugar
3-4 garlic cloves, minced
2 TBS cornstarch
1 TBS water
2 TBS olive oil
2 cups frozen stir fry vegetables
– dash of dry white cooking wine

Coat a large wok with olive oil over medium heat. Cube chicken breasts – add to wok and allow to cook, stirring frequently, for 5-7 minutes. Add garlic, pineapple juice, soy sauce, sugars and wine; mix well. Cover and allow to simmer for 15 minutes.

Remove lid and add vegetables – cover and allow to simmer for an additional 5 minutes.

Combine cornstarch and water in a small bowl; mix well. Add to wok and stir until thickened. Serve stir fry over steamed white rice. Pleasant Tastings!
