Peach Pineapple Jam
Food Ingredients:
6 cups chopped peaches 1 orange, juice and peel 1 cup crushed pineapple 9 cups sugar 3 tablespoons Pomona’s pectin if available
Recipe preparation:
1 Mix pectin with 1 cup sugar, stir into peaches, orange and pineapple. Heat to boiling. Add sugar all at once, bring back to a boil and boil one minute. Skim and pour into clean, sterilized canning jars. Process in a boiling water bath 10 minutes. If pectin is not available, combine fruit and sugar in pan, cook until mixture is thick and comes off spoon in sheets.
