Paula Deen’s Basic Meatloaf with CookingAndCrafting
This is one of the best recipes!! The meatloaf is light and tasty, and the sauce just adds that nice zesty addition to it that I crave!!
Ingredients
* 1 pound ground beef
* 1 1/4 teaspoons salt
* 1/4 teaspoon ground black pepper
* 1/2 cup chopped onion
* 1/2 cup chopped bell pepper
* 1 egg, lightly beaten
* 8 ounces canned diced tomatoes with juice
* 1/2 cup quick-cooking oats
Topping:
* 1/3 cup ketchup
* 2 tablespoons brown sugar
* 1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.
Try a can of Rotel Tomato with Habanero :)
Meatloaf is not meatloaf without green peppers.

Well its SOO good! next time though for me though im making more of that sauce that goes ontop to yummy!
I just made this recipe and i grated carrot instead of the bell pepper and it smells amazing ill have to update everyone when it is finished cooking!

I luv bell pepper but I have to omitt it from alot of recipes cuz my husband is allergic to them. I would prolly prefer the crushed tomatoes over the diced tomatoes as well in my meatloaf.
I remember my Grandmother taking the drippings from the meatloaf & makin what she called "Tomato Gravy" for an extra topping 7 gravy for mashed potatoes, yummm Man I miss her cookin!
I think I have decided what is for dinner 2morrow nite! 🙂
Looked like it started life a bit TOO wet, but it seemed to get over it. The oatmeal soaked it up? I'm with you on skipping the peppers, IMHO, they don't belong in a meatloaf. I'm betting that topping adds a REALLY nice touch.
