Ingredients:
1 cup flour
1 cup chopped kimchi
1 tsp salt
1 tsp sugar
3/4 cup cold water
1/4 cup kimchi broth/liquid
*1/2 cup chopped green onion into strips (optional)

Place all the ingredients in a bowl and mix well. In a large frying pan on medium high heat, add enough oil to cover the whole surface (about 1 TBSP). Add half of the batter and spread it out as thin as you can. Cook for around 2 mins or until the bottom of the pancake is golden brown and crispy. Flip it over. Cook the other side for around 2 mins as well. Cut it up and enjoy! Recipe makes 2 kimchi pancakes.
