Hominy Corn Bread
Food Ingredients:
1 cup Hominy 1 tablespoon Melted shortening 2 Eggs, well beaten 1/2 cup Corn-meal 1/2 teaspoon Salt 1 teaspoon Baking powder 1 cup Milk
Recipe preparation:
1 Combine hominy, shortening, eggs, and milk. Add corn-meal, salt, and baking powder. Let stand 5 minutes. Add 1 tablespoon more of milk if desirable. Pour into well-oiled pan and bake in hot oven (425 F) 35 minutes or until a rich golden brown. 6 servings. Florence Taft Eaton, Concord,
