Homemade Fresh Pasta Recipe
A pasta from scratch that I like, using 00 flour.
Ingredients:
2 and 1/2 cups 00 flour
1/2 teaspoon table salt (optional)
3 large eggs
2 Tablespoons olive oil
3 Tablespoons water (if needed)
If you do not have a food processor, you can mix it by hand and then knead it for 10 minutes.
I have made fresh pasta before with all purpose flour and never liked it. This 00 flour from Italy really makes this pasta worth making.
The sauce that I made:
4 Tablespoons olive oil
2 anchovies (wish that I had used 4 or 5 of them)
3 chopped garlic cloves
4 Tablespoons cooking water from pasta
3 Tablespoons fresh parsley

I've always been intimidated by making fresh pasta, but after watching this…I think Im going to try it. :)
not so fond of parsley as the main herb in pasta, id use chopped rocket or fennel perhaps specially with the anchovy, otherwise it looks tasty!

I use that flour it makes excellent pizza. I like to use that flour to make pasta only I use half double 00 and half semolina.

I have the same plates! No two are the same color-absolutely love them. Do you warm them in the oven before plating your food? Oh, it helps!

Rene, the food processor does almost all the work.
I never liked my homemade pasta with all purpose flour, so I broke the bank and bought 00 flour from amazon.
What a difference.
Ive made pasta once in my life and that was enough. Unless I get that kitchen aid attachment I'll just stick with the store bought or have you send me some. Its a work out rolling and kneading that dough. I was sweating just watching you do it.
