**Chicken, Pecan + Cranberry Salad Sandwich**
2 chicken breasts
1/4 cup pecans, toasted and roughly chopped
1/2 cup dried cranberries, roughly chopped
1.5 tablespoons shallot, minced
1/3 cup Greek yogurt
1 tablespoon light mayo
1 tablespoon apple cider vinegar (or champagne vinegar)
1 tablespoon rosemaryPreheat oven to 375 degrees. Rub chicken breasts with olive oil and season with salt and pepper. Roast for 20-25 minutes until chicken is cooked through. Set aside to cool.
Mix together greek yogurt, mayo, apple cider vinegar. In a large bowl, combine, shredded chicken, pecans, shallots and cranberries. Toss with dressing until well combined. Add to bread or salad and enjoy!
**The Ultimate Veggie Sandwich**
Spread each slice of bread with 1 tablespoon cream cheese- you can also substitute with hummus. On one slice of bread, layer veggies of choice then sprinkle with oil and vinegar salt and pepper.**DIY Electrolyte Drink**
