Healthy Holiday Makeover: Spinach Pie

Ingredients:
• 2.5 lbs. spinach, chopped (you can substitute frozen, thawed well)
• 1/2 cup olive oil
• 2 bunches green onions, diced (incl. 4 inches green)
• 1/2 cup mint, chopped
• 1/2 cup fresh dill, chopped (substitute 3 tbsp. dried)
• Salt and freshly ground black pepper to taste (optional)
• 1/2 lb. feta cheese, crumbled
• 4 eggs
• 1 lb. phyllo pastry sheets
Preparation:
Preheat oven to 350

Wash and drain the chopped spinach very well. If using frozen spinach, thaw completely and squeeze out excess water. Spinach should be dry.
If using frozen spinach, you will want to cook until excess moisture evaporates. Spinach mixture should be on the dry side.
In a large mixing bowl, combine the feta, eggs, chopped dill and mint. Add the spinach and mix until combined.
Using a pastry brush, lightly grease two 9 x 12 rectangular pans.
Unwrap the Phyllo:

Layer greased baking dish with 5 phyllo sheets (separate each sheet). Brush olive oil on 5th layer and add spinach mixture. Layer one phyllo sheet on top of spinach mixture and brush with olive oil. Repeat. On last layer, add 2 phyllo sheets on top and brush with plenty of olive oil. Cut before placing in oven.

Cook for 30 minutes or until top is golden brown.
