INGREDIENTS
2 large eggplants – sliced ½ inch thick
3 tablespoons olive oil – divided
1 teaspoon kosher salt – divided
black pepper
1 medium onion – diced
3 garlic cloves – grated
2 teaspoons dried oregano – divided
1 teaspoon garlic powder
½ teaspoon chili flakes – divided
32 ounce can whole peeled tomatoes
14 ounce can tomato sauce – low sodium
½ cup red wine
6 slices BelGioioso Sliced Mild Provolone
1 cup panko bread crumbs
3 ounces BelGioioso American Grana® parmesan – grated

I am glad you mentioned that even though this dish is Vegetarian it isn't healthy .
What type of meat would go best with eggplant or even eggplant and squash? With or without all the cheese.

Looks yummy, but why prepare an enormous amount of tomato sauce, then only use a fraction?
wow I've never seen Eggplant parm made this way. It looks great tho! I grew up making it with my sicilian grandmother and we thinly slice the eggplant somewhat thin, and we place it in eggs and bread it with bread crumbs and fry them in a skillet and then layer it with the sauce and cheeses and then put it in the oven
Everyone saying parmesan is not vegetarian: It is vegetarian, vegetarianism is when you avoid the consumption of meat,(red meat, poultry, fish) however parmesan is not vegan because it contains milk and rennet which are both animal products, bottom line is, eat what you're comfortable eating, and let others do that same!

What did you do with all the sauce? I only saw you put part of it on the bottom of the pan, and after the first layer….
I once tried to make fried egg plant, I see where I goofed…I should of removed the skin of the egg plant. I wish my boyfriend would eat this, it'd be a nice change and I may be able to eat this without the noodles. Thanks for the idea Jack!
I'm not sure how this goes but I have friends and co -workers who are vegetarian. I'm thinking there must be different levels of this. Some eat animal by-products and so don't. I personally think this recipe and suggest of trying would be good for some of us who are trying to cut down on our meat intake. Although I can't give up real bacon, lol!
All of you guys saying it's not vegetarian are wrong.. Vegetarians don't eat meat but often consume animal products.. Look up the definition on google and webster… Google says SOMETIMES vegetarians don't consume animal byproducts which would make you vegan… Get off your soap box and stop trying to say it's not vegetarian because it is. There is no use of meat in this meal regardless if cheese was made with rennet.. If you don't eat animal products good for you but don't be biased from your opinion when there are definitions from sources that state otherwise.. Maybe you guys need to go look up the definition instead of Jack..

I love eggplant parm but the night shade makes me not feel so well and I have soaked it in salt b4 cooking and still don't feel so well . I now leave it alone :-)?
