RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

200g of Quinoa
2 Cups of Water
Juice of 1/2 a lemon
5 Tablespoons of Extra Virgin Olive Oil
Salt
1 Cucumber (diced)
250g of Cherry Tomatoes (quartered)
400g Can of Chick Peas (drained and rinsed)
3 Tablespoons of Freshly Chopped Parsley
150g of Feta Cheese (crumbled)

Preparation Time: About 30 minutes

SERVES 6 – 8 (as a side dish) or 4 (as a main dish)

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

    lunch! Would it work with cooking the quinoa in broth instead of just
    water? If so, which kind would you recommend? Chicken?

    good day…..Tomatoes are actually a fruit, any fresh, in-season fruit
    makes a great substitute.
    Strawberries, cherries, apricots and grapes are some of the fruit that make
    a great tomato substitute.
