Chilli Mash

Food Ingredients:
900 grams potatoes unpeeled 50 grams butter 150 mls hot milk 1 salt and pepper 1 tablespoon mustard seeds 2 tablespoons olive oil 3 finely chopped spring onions 2 seeded and chopped green chillies

Recipe preparation:
1 Cover the potatoes with cold water in a large pan add a good pinch of salt bring to the boil and simmer for about 20 minutes until tender. 2 Drain well and leave until cool enough to handle. 3 Fry the mustard seeds in the olive oil. 4 When they start to pop shake the pan and leave until the popping stops (3 4 minutes). 5 Add the chopped spring onions and chopped green chillies cook for 23 minutes. 6 Peel potatoes and return to the pan with butter. 7 Mash smoothly over gentle heat then gradually add the hot milk and beat until creamy and smooth. 8 Fork the chilli mix into the mash with tbe juice of a lemon. 9 Add salt and pepper to taste. 10 Choose a floury potato golden wonderking edward maris piper or wilja and for the best possible mash cook whole and unpeeled. 11 Serves 4
