Chicken and Vegetable Pie – RECIPE

Chicken and Vegetable Pie is an amazing family-friendly meal. Chicken Thigh Fillets are combined with chopped leek, broccoli and a can of Mushroom Soup, then topped with some flaky Puff Pastry. Quick and easy to prepare, everyone will love this dish – give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

1kg of Chicken Thigh Fillets (about 6 or 7 fillets, chopped into chunks)
1 Leek (washed and sliced)
30g Butter
1 Cup of Mixed Frozen Vegetables (Peas, Carrot, Corn etc)
1 Head of Broccoli (trimmed and broken into florets)
1 Can of Cream of Mushroom Soup
2 Teaspoons of Dried Mixed Italian Herbs
1 Sheet of Frozen Puff Pastry (thawed)
1 Egg (lightly beaten)

Preparation Time: About 15 minutes
Cooking Time: About 50 minutes

SERVES 4-6

ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

    It’s quicker, easier and cheap to use a can of soup, than to make a batch
    of soup from scratch. Especially when I’m only using it for the base of
    another recipe 😉

    This dish is more of a chicken casserole with a pastry topping. You could
    make this as an enclosed pie, but I would recommend blind baking the base
    pastry first 😉

    You could use Cream of Chicken soup, Cream of Celery Soup or a jar of
    simmer sauce (like Chicken Tonight etc) 😉

    Another great comfort food meal. Nicely done. We make pot pies quite a bit
    in cold weather but use regular pie crust. I’ll have to try puff pastry;

    Conventional. Reduce the temperature slightly if using fan forced 😉
