Cauliflower Recipes for Easy Healthy Meals

Watch as Eating Well shows you how to cook cauliflower! You’d be surprised just how much you can do with this nutrient-packed vegetable, like replacing potatoes in some recipes. Steam eight cups of cauliflower florets and four cloves of garlic in boiling water for 12 to 15 for the first of two cauliflower recipes. Once completely cooked, combine them with 1/3 cup of non-fat buttermilk, two teaspoons of oil, one teaspoon of butter, and 1/2 teaspoon of salt and pepper in a food processor. Pull several times until the cauliflower puree has a creamy consistency. Serve the mashed cauliflower with a bit more oil and garnish with chives for another irresistible (and healthier) side dish. A roasted cauliflower recipe is a crunchy and satisfying option. Toss eight cups of cut cauliflower florets into a large bowl along with two tablespoons of oil, one teaspoon of marjoram, and 1/4 teaspoon of salt and pepper. Spread this out on a large, rimmed baking sheet and bake at 450 degrees until the cauliflower begins to soften and turn a nice brown color, or between 15 and 20 minutes. Drizzle two tablespoons of balsamic vinegar over the top of the oven-roasted cauliflower along with 1/2 cup of parmesan cheese. Place the pan back in the oven until the cheese has melted and any moisture has been absorbed by the cauliflower, usually taking between 5 and 10 minutes. These cauliflower recipes are a great alternative to other comfort food meals, and they provide you with the opportunity to try something new!

    buttermilk with a healthy substitute. Give us healthy options.

    I can see that more nutrition education is needed. There is no butter in
    Buttermilk & the amount of butter in this recipe is minimal compared to the
    amount of servings it makes!
