Can’t go wrong with pasta, olive oil, and fresh veggies for a light meal. This is a go-to recipe when I’ve been eating like a beast all week. It makes me feel like I’m eating a bowl of….. “healthy fresh”. It’s super easy to make and I’ve stop measuring a long time ago. I just throw whatever veggies I have in the olive oil and call it done.
It’s a quick, easy meal or side dish.

Made this tonight. It was so delicious !!! I used feta cheese instead of
Parmesan. Also added red bell peppers. Thanks for the great recipe.
