Grilled Eggplant Parmesan recipe
This grilled version of Eggplant Parmesan, is lighter and healthier than the fried kind yet flavorful, nourishing and so satisfying!
It can be served as an appetizer, or as the main meal paired with a crispy, green salad!
Ingredients:
1 medium long eggplant
100g tinned cherry tomatoes (seasoned with salt pepper and olive oil) 3 1/2 oz
100g mozzarella cheese ( one ball = 125g ) 4 1/3 oz
3 tbsp grated parmesan cheese
A few sprigs fresh basil
Salt
