Fresh Peach Mango Cobbler Recipe From Scratch With Fresh Whipped Cream
Ingredients
Filling:
3/4 cup white sugar
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon
6 cups fresh peaches sliced
2 cups fresh mango sliced
2 tablespoons lemon juice
Topping:
2 cups all-purpose flour
2 tablespoon white sugar
1 tablespoon baking powder
1 teaspoon salt
4 tablespoons shortening
1 cup evaporated milk
Fresh cream:
2 cups heavy whipping cream
2 teaspoons sugar
Preparation
1. In a large saucepan combine sugar, cornstarch, and cinnamon. Stir in fruit and lemon juice, tossing until evenly coated.
2. Bring to a boil 1 minute transfer to 13 x 9″ pan. Keep warm in 250 degree oven.
3. To Make Topping: Combine all ingredients except evaporated milk until crumb texture forms then add milk.
4. Heat oven to 400 degrees.
5. Remove peach filling from oven and drop dough onto peaches.
6. Return cobbler to oven and bake 30 minutes.
7. Cool and dust with brown sugar.
8. Mix heavy cream in very cold mixing bowl on medium, add sugar and whip on high until thickened.
9. Dollop a big serving of whipped cream onto the cobbler and enjoy.

Super I'm glad it was a success. I also use a potato peeler except for the mango I have one of those gadgets which works well. Next time you have to try a crumb topping, crunchy with oatmeal. I think there's a peach raspberry crumb in my library you should check that out 🙂
Great recipe! I made this yesterday and it's pretty much gone. We all loved it!
I peeled the peaches and mango with a fine potato peeler. It was fast and easier (for me) than getting a pot, boiling water, and then… using another container and adding water and ice.

I've read that too, like you would with tomatos. Might have to give that a shot next time 🙂
@divinechef I see alot of chefs blanch the peaches for 45 seconds or so in boiling water, and then a quick ice bath to reduce peeling time. Another great looking recipe.

I'll say about 50 minutes. The peaches are no fun to peel, and luckily I have one of those mango gadgets.
