You could try to garnish them on top of a nice fillet of fish or add it to
a nice chicken consomme.

Chef John, have you ever been to Per Se in NY city. Also owned by Thomas
Keller. We ate there a few months ago along with my nephew who did an
internship there for six months. Fine dining at it’s best !! I never ate so
much food for so many hours. Prepare to dig deep into your wallet for this
one!
So what are we suppose to do with these cured lemons?
@wernlyn There’s a Vietnamese version of this and it’s used to make Salty
Lemonade. It’s not as bad as it sounds.
