1 lb extra lean ground turkey
2 cups cooked quinoa
2/3 cup black beans
2 eggs, 3 egg whites
3/4 zucchini
1 bell pepper
1/3 red onion
1 tbsp garlic
2/3 cup mozzarella
Optional: tomatoes, green onions*
Approx macros for 1 of 4 servings: 397 calories, 46g protein, 30g carbs, 10g fat

This look so delicious! Does Maca taste like anything?
Absolutely delicious! I made this my family’s Thanksgiving breakfast, and
it did an excellent job of holding us over till the BIG meal. One thing I’d
note is that the amount of each ingredient listed was enough to fill a
12x12x3 cast iron skillet. So for someone who does resistance training, not
necessarily powerlifting, it is easily 6-7 servings. I’m just about to get
started on the sweet potato lasagna. Can’t wait.
