Have been experimenting with baked tofu bites marinating in different sauces, such as soy sauce, Korean barbeque sauce, etc. Then had the brilliant idea of marinating in my favorite pesto! A perfect low-cal replacement for fresh mozzarella in caprese salad or combined with tomatoes on a toasted baguette.
I am not very experienced with cooking tofu. I've noticed a lot of recipes use canola, vegetable oil or peanut oil but not so much olive oil. Is this just a preference to one's palette(based on the dish) or a common technique when cooking tofu (not using olive oil?)
Did I miss the measurements for the sauce ingredients?

Oh I made this the other day it came out really really good. I just found a havey object and placed it on the tofu then I stuck it in the freezer and did it that way. Only thing I did was eat this with rice and veggies was so good thank you for the idea. And a friend has blessed me with gettig a Tofuxpress so excite to try it with that. Thanks again!

I just followed the author's recipe. I did a quick Google search and it seems like cornstarch is traditionally used in Asian cuisine. I didn't see anything that really explained the difference between using cornstarch vs flour.
You should do an experiment! Dredge half in flour and half in cornstarch and see which one you like best. Let me know how it turns out.
