A chocolatey dessert that’s a hit with both kids and adults. This video recipe shows each step of the process & helpful tips.

Makes: 8
Ingredients:
2 cups Woolworths Select mixed fruit
1 cup Woolworths Select raisins
2/3 cup apple juice
½ cup Woolworths Select golden syrup
1/2 cup brewed espresso coffee, cooled
60g Woolworths Select butter, melted
1 cup loosely packed Homebrand brown sugar
11/2 cups fresh breadcrumbs, made from day-old bread
200g Woolworths Select dark cooking chocolate, chopped
1 cup Macro Organic plain flour
2 tablespoons Homebrand cocoa powder
3 teaspoons Woolworths Select ground mixed spice
1 teaspoon bicarbonate of soda
500ml custard, warmed to serve
500g fresh strawberries, to serve
Method:
1. Grease eight holes of a 12 hole (200ml capacity) loose-based texas muffin pan. Preheat oven 150⁰C fan forced.
2. Put dried fruit, raisins, apple juice and golden syrup into a saucepan. Bring to simmer, simmer 5 minutes until fruit is plump. Transfer to a large bowl. Cool to room temperature, about 20 minutes. Spoon mixture into a food processor. Pulse until finely chopped. Return to bowl.
3. Add coffee, butter, sugar, breadcrumbs and chocolate to the fruit mixture. Mix well. Sift the flour, cocoa powder, mixed spice and bicarbonate of soda together over the mixture and stir to combine.
4. Spoon evenly into 8 prepared holes. Bake 45 minutes or until a skewer inserted into centre of puddings comes out clean. Set aside 10 minutes in pan before turning out onto a wire rack. Serve warm puddings with warm custard and strawberries.
Tip 1: Puddings can be made up to 3 days in advance. Individually wrap each pudding in plastic wrap and store in the fridge.
Tip 2: To warm- Reheat in Microwave: Line a heat-proof, microwave-safe plate with baking paper. Turn 4 puddings, at a time, onto the plate. Cover loosely with plastic wrap. Place on a microwave-safe rack or upturned dinner plate and microwave on Medium-low/Defrost for 8-10 minutes or until the puddings feel warm (on standing the pudding will get hotter). Allow to stand 5 minutes before serving.
Tip 3: Can replace the coffee with water.
