Stir frys can be extremely healthy…. It’s what you add that makes them
healthy.

As someone who has cooked a lot, including stir fries, this order is wrong.
First of all, you don’t need a wok, a wok is completely irrelevant to
achieve your goals. Woks are for a specific type of burner, which people
don’t have. So putting a wok on a typical stove is dumb. Use a 3-5 quart
saute pan.
Traditionally Asians like to add in garlic to the hot oil first to flavor
the oil. This is wrong because garlic burns quickly, and burned garlic has
an acrid taste. Don’t do this.
You can add the garlic, ginger, or whatever seasoning to the meat at the
end of the process if you like, that way it won’t burn, or add it in when
you cook the vegetables at a lower heat.
The only thing you really need to fry here is the meat. You want to get
some caramelization on the meat. If you used the order in the video you
would just steam it. Putting the meat in first and by itself will keep the
temp high and give it a nice color.
If you care about not overcooking the meat, you will have to cook the meat
first, by itself, then transfer it to a bowl or plate. It’s just easier
this way. If you keep the meat in the pan and then add the vegetables, by
the time the vegetables are cooked the meat is overcooked.
Then you can saute the vegetables at a lower heat, they don’t need to be
cooked as high as the meat. If you want to create a sauce do that as well.
It’s a good idea to season the meat when you cook it, and then also season
the vegetables so both have good sodium and flavor.
When the vegetables are cooked to the doneness you like them add the meat
back in to bring to temp, perfect.

For those who says that this
stir fry is not stir fry, etc, well this is exactly what chicken stir fry
should be. It’s chinese, and yes stir frying is a method of cooking found
by chinese, introduced by chinese, and yes the order is exactly like this
video.
Hot the oil in the wok (stir frying in a pan is stupid since most of your
food will end up on the floor instead of your plate. You can cook in sauce
pan but lets use saucepan for sauce making ok? :p), then put in the
aromatic (garlic, ginger, shallots, etc), do it fast n dont burn them since
it can be bitter (adding them late like some American would suggest will
also make your food taste like raw garlic), add the protein, stir fry till
halved cookes, add in thr veggies, pour some stock and sauces (soy sauce,
sugar and cooking wine mostly), cover cook for several minutes, serve on
prepared hot rice with a cup of chinese tea.
