Recipe ingredients and directions:
Armenian Salad
3 cucumbers, peeled and cut in 1/2 " cubes
16 red radishes, sliced
1 cup chopped celery
16 black olives, especially Greek Kalamata olives
3 Tbsp pistachio nuts, chopped (or walnuts)
1/2 cup olive oil
1 cup vinegar
2 Tbsp lemon juice
1 teaspoon salt
Mix the dressing and toss with the salad. Chill before serving.
