    Leftover ROAST BEEF & Potato HASH Breakfast Recipe

    What to do with those leftovers? Use leftover roast beef and
    cooked potatoes to make a fantastic hash. This is so quick
    and easy and tastes wonderful. Serving for breakfast with
    a poached egg on top. Enjoy

    Country Roast Beef Hash

    INGREDIENTS

    1 – 1 1/2 cups cubed or shredded cooked roast beef
    1 cup diced onion
    1 cup diced bell pepper
    1 cup diced potatoes – I used cooked

    salt and pepper to taste
    1 tbsp Worsterchire sauce
    1/2 tsp minced garlic
    1/4 cup apple cider vinegar

    In medium high heat skillet add 2 tbsp oil,
    onion, pepper, minced garlic and salt and pepper.
    Cook for 3-5 minutes until vegies are tender.
    **If you are using raw pototo, cook your pototoes
    first for 3-4 minutes before adding the onion and
    pepper.

    Add precooked potatoes and cook for 2 more minutes.

    Add roast beef and Worsterchire sauce and cook
    for 2-3 more minutes until beef is warmed.

    Add 1/4 cup apple cider vinegar and stir well.
    Cook for 2 more minutes and it is done.

    Serving with a poached egg on top.

    Enjoy.
