Recipe ingredients and directions:
3 cups rolled oats
3/4 cup coarsely chopped pecans
3/4 cup coarsely chopped almonds
1/2 cup shredded coconut
1/2 cup molasses
1/2 cup packed brown sugar
1/4 cup water
3 tablespoons vegetable oil
1/2 cup golden raisins
1/2 cup raisins
1 cup dried cranberries
Preheat oven to 325F. Grease a large, shallow baking pan. Combine
oats, pecans, almonds, and coconut and spread in prepared pan.
Combine molasses, brown sugar, water, and oil in a medium saucepan.
Bring to a boil over high heat. Pour over oat mixture.
Bake oat mixture for 20 minutes, stirring every 5 minutes. Stir
in raisins and cranberries. Bake for 15 minutes longer, stirring
every 5 minutes. Cool. Store in an airtight container.
VARIATION: For extra flavor, add 1 tablespoon vanilla extract to
the molasses mixture.
