Chicken Meatloaf

Food Ingredients:
1 pound ground chicken breast 1 cup crushed saltine crackers (about 24) cup minced fresh onion cup water 2 tablespoons minced green bell pepper 2 tablespoons ketchup 1 tablespoon Dijon Mustard 1 teaspoon prepared horseradish teaspoon paprika teaspoon pepper Vegetable cooking spray

Recipe preparation:
1 Combine all of the ingredients except cooking spray in a bowl, and stir until well-blended. 2 Pack mixture into an 8X4 inch loaf pan coated with cooking spray. Bake at 350* F for 45 minutes or until done. Cut meatloaf into 12 slices. 3 Yield: 6 servings (serving size: 2 slices). 4 Reader Recipes – Virginia White, Suisun City, California 5 NOTES : I hadn’t realized how old this recipe is. I probably make it once a month or so. If I can’t find ground chicken at the grocery store I usually make my own by pulsing some breasts and thighs in the food processor. I also usually use low-salt crackers and increase the mustard and horseradish to give it a little more bite.
