Bread Vegetable Masala is a Quick ‘n Easy Breakfast/Brunch Recipe (Vegan Recipe). On the days when you don’t have any idea what to cook and you have some bread and veggies in your fridge, you can make this dish in a jiffy. You can even make this as an evening snack or for lunch box for your kids, because this is healthy too with all the veggies!
Bread – 6 slices;
Ginger, Garlic, Green Chilli – finely chopped/minced, 1 tsp each;
Onion – sliced, 1/2 cup;
Tomatoes – chopped/crushed, 1/2 cup;
Vegetables – any veggies of your choice e.g., cabbage, green beans, peas, bell peppers (capsicum), cauliflower, carrots, spring onions, mushrooms etc.;
Coriander leaves/ Cilantro to garnish;
Lime/lemon juice – 1tsp;
Mustard seeds and cumin seeds – 1/2 tsp each;
Turmeric powder – 1/4 tsp;
Red chilli powder and Garam Masala powder – 1 tsp each;
Salt to Taste;
Oil – 2 tbsp.
