I’ve seen salmon cooked over cedar planks on a barbeque. The subtle
flavors of the cedar smoke easily penetrate fish, but what is the idea of
cooking a large rib roast on cedar in the oven? I wouldn’t think there
would be any smoke at all, and what little there was wouldn’t penetrate
very deeply into that big roast.
