How to Make Creamy Mashed Potato | Marco Pierre White Recipe

Marco shows how to make mashed potato with as little moisture as possible – the secret is creaming baked potatoes, not boiled. Finish with a little hot milk and butter – and if you’re topping a shepherd’s pie or fish pie, enrich with egg yolk.

1kg potatoes
60ml hot milk
75g butter, softened (could do half oil/half butter)
1 egg yolk
Salt and pepper to taste
