Pan: I used a glass 11″ x 7″ pan. Use either glass or ceramic. Don’t use metal.
* 1 large eggplant
* 2 eggs
* 1/2 cup flour
* 1 tsp salt
* Cooking oil (I used coconut oil)
* 1/2 cup grated Parmesan cheese
* 8 ounces sliced Mozzarella cheese
* about 20 ounces of marinara sauce
